Presentation about Khubz Tannour by Chef Annabel Rabiyah
Khubz tannour is a type of flat bread, typical to Iraq. Chef Annabel Rabiyah, who is the head chef and co-founder of Awafi Kitchen, will share the preparation and history of it.
It is composed of the same ingredients as any other bread : flour, yeast, salt and water. It has a circular shape, is about 8 inches (20 cm) long, and 1 inch (3 cm) thick. It is characterized by the air bubbles that appear on its surface during baking.
Awafi kitchen is a restaurant by cousins of Iraqi Jewish diaspora, making meals as a tribute to their heritage. They host events in restaurants in Boston, as well as the greater Northeast. When their family left Iraq, between 1950 and 1970, much was left behind, but not the food. They recreate the meals they grew up eating as children, and the stories they heard of food in the old country. They cook to preserve the lesser known pieces of Jewish history, and Iraqi history, and to share some delicious recipes with our community.
